So, I wanted to share one of my favorite breakfast's. Lately, I'm obsessed with it. The best part about it is that it's super yummy, quick, easy and nutritious! Blueberry Oatmeal. Yum!
For this recipe, I use steel cut oats and, depending on what mood I'm in or how much time I have, I either cook them on the stove or in the microwave. But, beware, if you use the microwave, be sure to use a deep or extra large bowl because you will wind up with a mess on your hands. I typically cook my oats a bit longer because I like them a tad softer and creamier, so I tend to add liquid as needed to keep them from drying out or burning, particularly if I cook them on the stove. You could also sub any kind of nut butter in here. Almond butter is also super delicious in the recipe and a lot of people like to add chia seeds to make it extra creamy and nutritious, but this particular way is my go-to.
Tip: Did you know cinnamon brings out the natural sweetness in foods? Yup. That's part of the reason why I add it in here. That, and because it's super yummy and has great health benefits, as well.
